In 1804, the Sudak School was founded, and in 1812, the Nikitsky Botanical Garden, which is associated with the development of viticulture and winemaking in Ukraine. At the Nikitsky Botanical Garden, a vine-production training and experimental demonstrative farm "Magarach" was organized, on the basis of which the Institute of Vine and Wine was created. In the Kherson province at the end of the 19th century, Prince Trubetskoy planted 200 acres of vine plantations on his estate in the village of Kazatskoye. At that time, several large vineyards and wineries were also created near Odessa and Nikolaev. In Odessa in 1905, V.E. Tairov organized a wine-making station (now the V.E. Tairov Institute of Viticulture and Winemaking). Moving further south along the Dniester to the Mohyliv-Podilsky district, we can meet several more local grape varieties. And although these varieties are considered traditionally Moldovan, there is no doubt that they grew on both banks of the Dniester and not only on its Moldavian right bank. Ukrainian winemaking traditions are as old as the world. Although these traditions and technologies have survived many periods of decline, such as the Turkish rule in Podillya and other regions of Ukraine, or the Soviet era, when unique vineyards were destroyed in the mid-80s. Now the traditions of winemaking are being restored. Ukrainian wine-making and viticulture, regardless of complex social realities, is taking leaps and bounds through the thorns to the stars. New wines are emerging Перемістившись дещо на південний схід, у сусіднє з Галичиною Поділля, можна зустріти ще більше розмаїття місцевих сортів винограду. Тільки в одному Заліщицькому району, у міжвоєнний період, було описано АЖ сім автохтонних сортів винограду з яких робили вино. Один з цих сортів називається Кам’янець (похідне від Кам’янець-Подільський). Славиться цей сорт тим, що з нього можна виготовляти як сухі так і десертні вина, і він майже не чутливий до морозів та хвороб. Крім того особливістю цього сорту є вразливість до благородної гнилі, що дає змогу виготовляти вина в токайському стилі.
