There is an expression in the Book of Genesis: "The grape is the tree of life." The first mention of the cultivation of grapes on the territory of Ukraine refers to the period VII-IV Art. BC Viticulture and winemaking developed around the ancient cities of Chersonese, Antikapeia, Tiritaki, Olbia in the territory of modern Nikolayevshchina. During the period of Kievan Rus, it is mentioned (Nikon's Chronicle of 1151) "Berendei and black hoods of the volost and poskosha grapes". Literary sources of the 6th century tell about the successful cultivation of grapes in the monastery gardens of Kyiv. In 1735, new vineyards were planted in Kyiv on the slopes of the Dnieper, and in 1758 - next to the Klovsky Palace, where in a few years there were about 30,000 bushes. The history of wine is inseparable from the history of mankind. Wine is a special drink. Its value consists of two sources: berries that absorb solar energy and yeast cells - factories of many useful substances. This sunny drink contains a number of nutritious and biologically active substances useful for the human body, which include organic acids (tartaric, malic, citric, succinic, etc.) contained in wine in an easily digestible form, nitrogenous compounds: proteins, amino acids, coloring and phenolic substances, glycerin, sugar, pectin substances, very valuable macro- and microelements: potassium, calcium, magnesium, iron, manganese, copper, zinc, boron, chromium, fluorine, iodine, arsenic, cobalt, etc. The educational institution has developed and approved recipes for such fruit and berry wines: Blackcurrant sweet, Yoshta sweet, Sophia's Treasures, Sophia's stars Chudosad, Umanskoe velvet, Muscat aroma. Many of these wines received the highest awards, in particular, at the international Golden Griffin competition. By 1985, the area of vineyards in Ukraine amounted to 209 thousand hectares, and the gross grape harvest - 913 thousand tons. A modern processing base was created in Ukraine. As a result of the anti-alcohol campaign, significant losses were inflicted on the economy. Gross harvest of grapes decreased by 3-5 times. Fruit and berry winemaking was completely destroyed.
