In the autumn of 1844, the Main School of Horticulture was established in Odessa, the curriculum of which provided for the study of horticulture, viticulture and winemaking. In 1859 the school was transferred to Uman. At the suggestion of the school, the production of wine from fruits and berries was legalized. To obtain a must similar to grape must, the highly acidic juice was diluted with water to normal acidity. It should be noted that fruit and berry winemaking in Ukraine originates from Uman. At the beginning of the XX century. in the Uman School of Horticulture, a special course was taught "Processing fruits and berries into wine." The educational farm of the school produced several varieties of wine, which were in great demand. Graduates of the Uman School used the recipes of wines at their place of work. In ancient mythology, the god Dionysus was the patron of viticulture and winemaking. One day he found a small vine and placed it in a bird bone. The plant began to grow so fast that it was necessary to look for another place. He put her in the bone of a lion, and then a donkey. Therefore, people who drink wine first sing like birds, then become lions, and finally turn into donkeys. In 1804, the Sudak School was founded, and in 1812, the Nikitsky Botanical Garden, which is associated with the development of viticulture and winemaking in Ukraine. At the Nikitsky Botanical Garden, a vine-production training and experimental demonstrative farm "Magarach" was organized, on the basis of which the Institute of Vine and Wine was created. In the Kherson province at the end of the 19th century, Prince Trubetskoy planted 200 acres of vine plantations on his estate in the village of Kazatskoye. At that time, several large vineyards and wineries were also created near Odessa and Nikolaev. In Odessa in 1905, V.E. Tairov organized a wine-making station (now the V.E. Tairov Institute of Viticulture and Winemaking).
